What is mycoprotein?
Mycelium, the thread-like body mass of fungi, is packed with high-quality protein. Mycoprotein is protein from fungi.
But it's so much more than this too. Our mycoprotein is highly digestable and has a balanced amino acid profile, with all essential amino acids. The mycelium also contains high-quality dietary fiber and minerals.
Sounds good so far, but what about the fungi? Here we need to look more closely, or more precisely, magnify. All fungi, whether or not they produce mushrooms, are microbes. They chain together in long, delicate threads called hyfae that make up the mycelium, which is basically a huge nutrient transportation network. So while we can't see individual microbial fungi with the naked eye, the mycelium is easy to spot.
The hyfae closely resemble the fibers in animal muscle in strength and texture, making mycelium an excellent complement or replacement for meat.
What's more, mycelium can be manipulated and molded to meet the needs of different food applications, and the team at NoMy has developed a set of simple, gentle processing steps that open a wide range of possiblities for mycoproteins.
